Devito’s Italian: The Night a Bartender Talked Me Into Moving to Tampa

December 2025, tail end of months of medical treatment. That morning, my doctor gave me the all-clear. I was in Tampa by myself, and even alone, that news wasn’t going to end with DoorDash to a hotel room. I needed to go out and actually celebrate. A quick search turned up a place two blocks from where I was staying: Devito’s Italian. Italians know how to celebrate — seemed like the right call.

Hayden

I sat at the bar and quickly made friends with Hayden, the bartender. He asked where I was from and what brought me to town. When I told him, he spent the rest of the night making me custom cocktails, on the house, and then told the owners what was going on. They came out, sat with me for a while, and ended up covering the entire meal. I spent a good four hours there that night. That kind of gesture — a restaurant celebrating a stranger’s good news with him — stuck with me.

There’s a cocktail menu, and I started properly with a Manhattan. After that, Hayden got a read on what I liked and just started building custom drinks on the spot, no menu involved. I love a bartender who can improvise like that, and bartenders tend to love a patron willing to hand over the reins without needing to know exactly what’s going into the glass. I genuinely couldn’t tell you what several of those drinks were. What I can tell you is that every single one was different, and every single one was excellent.

Dinner

I started with a classic Caesar salad — crisp romaine, a dressing and Parmesan balance that didn’t overwhelm the greens, and a crusty, garlicky crouton alongside it, exactly what you’d expect from an Italian kitchen doing the basics right.

For the entrée, Rigatoni Bolognese — about as hearty as pasta gets. A generous amount of rigatoni, a rich marinara-based meat sauce, ground beef and what I suspect was some ground lamb mixed in. Nothing reinventing the category, and it didn’t need to. It was exactly what I wanted that night, and I finished every bite.

Dessert was a lemon cake, served with an orchid on the plate. Some nights I eat the orchid leaves. That night, with Hayden still sending drinks my way, I think dessert lost out to the cocktail program entirely.

The Push to Move

I hadn’t decided to move to Tampa yet at that point — it was still just an idea I was turning over. Once I mentioned it out loud that night, the table turned on me. The owners, their friends, everyone chimed in with reasons Tampa would be perfect for me. Real peer pressure, delivered with genuine enthusiasm.

Three months later, I was living in Tampa.

The Verdict

I’ve been back twice since moving. Hayden still improvises beautifully behind the bar, and the place holds up exactly as well as that first night suggested. Tampa has enough good food that I can’t make it a weekly stop, but I’ll keep going back — if for no other reason than to say thanks, again, for the night that helped talk me into this city.
